{RECIPE} Vegetable Kebabs With Couscous

Ingredients:
(serves 4)

2 courgettes/zucchinis
1 red pepper
2 small onions
250g mushrooms
200g pomodoro (or other sweet) tomatoes
125ml olive oil
1 tsp ground cumin
1 tsp coriander leaf
1 tsp thyme
couscous to serve



Directions:

Chop the courgettes, mushrooms and red peppers into large pieces. Cut the onion into quarters, leaving on a little root to hold them together. Put the courgettes, mushrooms, red peppers, onions and tomatoes into a large bowl. Mix the olive oil and herbs together in a jug and pour over the vegetables and toss to coat. Meanwhile soak 16  skewers in a large tub of water.

The above steps can be done a couple of hours ahead or even the night before, and the vegetables left to marinate in the oil. I am not one for prepping in advance so always do things at the same time as cooking.

Heat the grill. Thread the vegetables onto the skewers and scrape any leftover herbs from the bowl and brush them on the veg. Grill for around 5 minutes on either side.

Serve hot on a bed of couscous. (I prepared 500g couscous according to the packet instructions, then added 1 tbsp olive oil, 2 tsp bouillon, a squeeze of lemon juice, 1 tbsp coriander leaf and 2 tbsp chopped fresh parsley. But plain couscous would work as well.)

Quick Tip

You can easily change up the quantity of the vegetables in this recipe. I love grilled courgette, tomatoes and mushrooms but am not overly keen on red pepper and onions. So I have more of the things I like. If you prefer other vegetables you can add more of them and have less of the ones you don't like as much. It really doesn't matter. Also if you're a cheese lover you could try adding some halloumi to the skewers.
